- In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, combine beaten egg, milk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples gently.
- Grease silicone muffin molds or small bowls with vegetable oil.
- Scoop batter into molds, filling about 3/4 full.
- Add one cup of water to the pressure cooker and place the trivet inside.
- Place filled molds on the trivet, stack if needed using foil sling.
- Cook on high pressure for 20 minutes, then quick release and carefully remove molds. Let cool slightly before serving.
